In a medium bowl combine chia seeds, coconut milk, maple syrup, and vanilla. Cover and refrigerate overnight.
Whisk chia mixture to break up any clumps. Have ready 4 small cups, glasses, or jars.
In bottom of each cup or jar, scatter a single layer of pineapple chunks and banana slices. Top each with ¼ cup chia pudding. Top with another layer of pineapple and banana, then sprinkle with 1 tablespoon each coconut and cashews. Top each with ¼ cup chia pudding, and garnish the top with a few pineapple chunks, banana slices, coconut, and cashews.
Serve or refrigerate, covered, until needed.
